Those who prefer stricter limit values ​​today cannot avoid their own water filter. In addition, there are now methods of post-processing at home that turn the water into a drink with better taste or certain functions. There is also a fascinating variety of methods and devices that have physically, chemically or electrically lifted water into a new dimension of drinking. FOREWORD TO PART 1 Unfortunately, there is still a lot of mysticism on the water market. Here I want to give you a solid overview of what is best for your purpose. When I decided in 2004 to move to Bad Füssing in Lower Bavaria to work with the doctor Dr. med. 10 WATER - LIFE & HEALTH 10 Water - in what form? Living food, especially fruit and vegetables, also largely consists of water. But we can never eat as much of it as we need water. Above all, we shouldn't eat so much, as our sedentary lifestyle no longer requires food that is so high in calories. Obesity is one of the greatest health risks of our time. We need solid food above all to gain energy. It is obtained by metabolizing carbohydrates. Carbohydrates are made up of carbon, hydrogen and oxygen. Glucose, for example, has the formula C 6 H 12 O 6. What we primarily need is hydrogen, i.e. the 12 H atoms (= 6 H 2 molecules) in it. That is why we eliminate most of the carbon and the oxygen used in combustion as quickly as possible by exhaling about 1 kilogram of carbon dioxide a day. Carbon dioxide is a deadly gas because excessive amounts of it make the body acidic. It is created all the time by burning the carbohydrates in our food with the help of the oxygen we breathe. To breathe out the gas, the lungs alone need 0.5 liters of water a day. So when we consume carbonated drinks, we put additional strain on the organism. This applies to sparkling water, and especially to sugary sodas, which are particularly rich in carbohydrates.

11 HISTORY OF WATER DRINKING 11 In addition to boiled water and tea, beer was the first drink that the leading civilizations in Babylonia and Egypt opted for. Everyone drank it every day. Just don't drink water - and if you do, just boil it: this has been the clear message to everyone since the beginning of civilization. Because up to our days mankind has not yet succeeded everywhere in the world in making drinking water available that is harmless to health. Most infectious diseases are still transmitted through water.

12 WATER IS NOT AN ELEMENT Shortly before the French Revolution, Antoine de Lavoisier turned the image of water that science had previously had on its head. It is not a primordial element, as was believed: it is hydrogen burned by oxygen. In the formula H 2 0, two gases have combined to give off energy to form a molecule which, depending on the temperature, occurs in solid, liquid or gaseous form. The important thing about Lavoisiere's discovery was that water can be split back into its two basic components, hydrogen and oxygen, by adding large amounts of thermal energy. This is called thermolysis. Nowadays we know from the research of Gerald Pollack that even small amounts of infrared heat energy in the water form certain structures, so-called exclusion zones, in which the water cleans itself of foreign substances. 8) Shortly after Lavoisier, the first battery was developed by Alessandro Volta and Johann-Wilhelm Ritter demonstrated in 1800 with an experiment on water electrolysis how much water can be broken down into its gases with the low current from this battery. Then he generated water again from the two gases by ignition. With a membrane placed between the poles, two types of water could be generated: a basic one for the negative pole and an acidic one for the positive pole. The electrochemists were enthusiastic about the possibilities of this simple technology. But nobody thought of drinking water. It was not until the 1930s that the Munich engineer Alfons Natterer produced electrolyte water for the treatment of metabolic diseases 5). In the decades that followed, many other uses were explored for both alkaline and acidic water. In Japan, Yoshimi Sano developed the first water ionizer for use at home in 1966, primarily to produce basic water himself. Because this, so it was found out later, stores energy in the form of dissolved hydrogen gas and has a selective antioxidant effect.

13 13 WATER ELECTROLYSIS The negative redox potential gives the alkaline activated water in the cathode compartment special antioxidant properties that can be traced back to the hydrogen dissolved in it. Diaphragm A diaphragm electrolysis takes place in a water ionizer. A direct current flows from the negative pole to the positive pole, whereby the electrons migrate over the ions dissolved in the water. Through various electrochemical processes that occur, the water in the cathode chamber becomes basic and electron-rich (H 2 -saturated), on the anode side it becomes acidic and electron-poor (O 2 -saturated), which is noticeable in each case by a changed redox potential (ORP). Electrolysis can increase the ph value of normally ph-neutral water up to approx. Ph 12.9. In Germany, however, a maximum ph value of 9.5 is permitted as drinking water. Therefore you can adjust every water ionizer so that the maximum drinking pH value is not exceeded. Even if the upper limit of pH 9.5 is accidentally exceeded, alkaline activated water is not a dangerous substance, or even corrosive like a chemical lye with the same high pH value. Even extremely acidic activated water with a pH value of 2.5 does not attack the body because, unlike gastric acid with pH 2.5, it is only weakly buffered. 6)

14 PH VALUE 14 Hydrochloric acid a large number of Cl - ions are available to have a caustic effect. Or a sodium hydroxide solution with a large number of Na + ions. In the electrolytically obtained alkaline and acidic activated water, only those acid and lye residues are present that were already present in the drinking water, i.e. very small amounts in the range of a few milligrams / liter. Therefore, electro-activated drinking water cannot harm the body either externally or internally. The graphic below symbolizes strong and weak aqueous solutions from top to bottom. The same ph value can therefore mean completely different effects.All aqueous solutions, including diluted alkalis and acids, have a certain pH value. The ph value means on a logarithmic scale from 0-14 the number of H 3 O + ions in relation to the OH - ions. At ph 7 this ratio is 1: 1. At ph 6 it is 10: 1, at ph 8 it is 1:10. Each ph level means a tenfold increase. At ph 14 the ratio is 1: 10 million. at ph 1 it is 10 million: 1. The ph value of an aqueous solution therefore depends on a ratio and is not an absolute value. The character and strength of an acid or base (alkali) is made up of the so-called acid or base residue. 16 BASIC DRINK 16 Of course, excessive and unhealthy diet is an important cause of overacidification-related problems in the body. According to Dr. med. Walter Irlacher, however, drinks are greatly underestimated as factors that cause acidity. Often more than half of the daily calorie intake consists of beverages containing sugar or alcohol. Replacing these at least partially with alkaline activated water saves the body not only a considerable excess of calories, but also an enormous acid load. Different acidic everyday drinks with a similarly low pH value are quite different in their acid buffering, as reported by the Federal Institute for Risk Assessment (BRD). 7) Swiss scientists have determined how much caustic soda is required (titratable acidity) to neutralize these drinks to pH 7. An apple a day may be healthy - 10 apples in a liter of apple juice may not be. Can you reduce the acidity of drinking by mixing such drinks with alkaline activated water despite its low buffering? In our test, a Coca Cola (pH 2.7) was neutralized to pH 7 with 32 times the amount of tap water (Munich). With alkaline activated water (pH 9.5) from the same line, we only needed 16 times the amount. Incidentally, within the cola drinks known as very acidic, there are considerable differences in both the pH value and the redox potential (ORP). Death in the fermentation cellar is based on the effects of carbon dioxide. It is an anesthetic gas and is e.g. used in slaughterhouses. Its calming effect is surefire. Sprudel is a safe relaxer. Carbon dioxide (CO 2) also calms the mineral water industry, which presses tons of exhaust gas into its products. Because the toxic CO 2 keeps mineral water germ-free for longer, so that it can be stored for a long time and transported far. Further CO 2 is generated during transport. But world brands have to be sold worldwide so that the advertising effort is worthwhile.

18 MINERAL WATER 18 Today, mineral water is mostly transported in plastic bottles due to its lower transport weight. Waste from it drifts in almost all seas - the consequences in terms of their impact on the food chain cannot yet be foreseen. Consumers with a conscience therefore choose mineral water in glass bottles. There is no doubt that lugging boxes is definitely worthwhile for the orthopedic branch. Is mineral water really more valuable than tap water? The drinking water ordinance is much stricter in its limit values ​​than the mineral water ordinance. Only a few mineral waters on the market would even meet the standards for drinking water. Not even the still waters and many medicinal waters.

Ceramic water also keeps water fresh longer. Another method of the 19th century was invented by the pharmacist Friedrich A. A. Struve, who reconstructed the famous medicinal waters based on their mineral composition and sold them in drinking spa establishments from London to St. Petersburg with enormous economic success. In the 20th century, however, it turned out that not only the minerals are responsible for the healing properties of water, but also the dissolved gases, some of which are very volatile. In our contemporary plastic bottles in particular, these gases are often removed very quickly after filling. The bottles are shrinking and we now know that especially valuable hydrogen is escaping, which is typical for many fresh medicinal waters.

20 HYDROGEN AS A HEALING GAS 20 In the 1970s, Vitold Bakhir discovered apparently abnormal properties of electrolytically treated water. In a gigantic water research project in the Soviet Union, it turned out that natural water species that were considered particularly healthy also had such properties. The common feature was an extraordinary redox potential, i.e. an electrical parameter that had previously not been taken into account with water, because previously only changed ph values ​​and mineral contents had been discussed. This redox potential could not be calculated with the known formulas about the relationship between the ph value and the redox potential of the dissolved minerals. 9) Bakhir had not discovered a new field of chemistry, but overlooked the fact that hydrogen, which by definition has the redox potential of 0 mv (E o), can also have a significant influence on the redox potential of all water if it dissolves in it. At the same time, the content of dissolved oxygen also plays an important role, especially if the normal equilibrium of hydrogen and oxygen is changed in one direction or the other, for example by diaphragm electrolysis. At the end of the 1990s, a Japanese research group led by Sanetaka Shirahata discovered that the dissolved hydrogen in particular is responsible for the healing properties of water. 10) The researchers compared well-known natural healing waters with artificially produced alkaline activated water from a water ionizer and vitamin C with regard to an antioxidant effect on disease-promoting free radicals, the proof of the radical scavenging function of atomic hydrogen (H) was first provided. Shigeo Ohta supplemented this in 2008 with the proof that molecular, i.e. gaseous hydrogen (H 2) also has a selective radical scavenger function on the most dangerous radical (hydroxyl radical). 11) In addition, H 2 can freshen up the body's own antioxidants such as glutathione, vitamin C, Q 10, catechin or vitamin E. 21 SIMPLE DRINKING WATER FILTERS 21 First things first: In order to convert your tap water into optimal drinking water, you don't have to treat all of your cold water. It is sufficient if you treat the amount of water that you want to use for drinking and cooking, usually no more than 10 to 30 liters per day. The basic drinking water optimization is done through filtration. There are different filters for drinking water. But you always have to divert the water to be optimized from your water pipe. CAN FILTER The simplest method is to pour the cold water from your tap into a can filter and wait for it to run through. Jug filters reduce a large number of inorganic and organic pollutants in the water with a small replaceable cartridge that is filled with activated carbon and other filter materials. Their disadvantage is the relatively open construction, so that pollutants from the air can nestle in it over time. 23 REVERSE OSMOSIS FILTER 23 Reverse osmosis makes it possible to filter water almost as completely as distillation. In the end, there is practically nothing left but water molecules. Illustration: Reverse osmosis system AQUAPHOR MORION RO The point of contention is: Is it still drinking water? Legislators and WHO 13) deny this. The Russian water researchers Prilutsky and Bakhir report: 14) Long-term drinking of deionized water, reverse osmosis water or melt water, very soft water, leads to disorders in the adrenal cortex, with the result of heart disease, high blood pressure, the occurrence of joint pain, a tendency to arthritis and osteoarthritis . In cattle it leads to cramp syndrome and in laboratory rats to cardiac arrhythmias. The doctor Dr. Walter Irlacher warns: 15) Distilled water sucks vital minerals like calcium, potassium and magnesium out of the cell like a sponge. Proponents refer to the American doctor Dr. Norman Walker (), who drank distilled water for decades. It is kept secret that he drank it alternately with fruit and vegetable juices throughout the day. That he successfully compensated for the mineral deficit in the water is obvious. Reverse osmosis is a filter process that works with the water pressure acting on filters arranged in series with ever narrower pores. Aristotle already reported on Greek sailors who sank amphorae deep below sea level. The high water pressure pushed the water through the pores, but did not let the salt pass through. Result: Drinkable fresh water. In the 20th century, reverse osmosis was developed for space travelers to obtain drinking water from their urine. However, there is no such requirement for normal tap water. Normal high-performance filters are preferable because they keep the valuable minerals in the water. In Israel, due to a lack of water, people are often forced to obtain drinking water through reverse osmosis. The government stipulates that this water must be fortified with at least 50 mg calcium carbonate in order not to endanger public health. I also strongly recommend re-mineralizing reverse osmosis water.

24 WATER IONIZERS 24 Japan. Residential complex Electrolytic water ionizers go one step further in water treatment than water filters (which are usually built into them): They activate the tap water by enriching the drinking water obtained with bases and antioxidant hydrogen. In Far Eastern countries like Japan, electrolytic water ionizers have been part of the healthy lifestyle since around 1985. When upscale apartments are sold there, a water ionizer is not uncommon as an incentive to buy, because around a third of all Japanese drink alkaline activated water. Most of the technical know-how for building a household water ionizer comes from Japan, but the Japanese industry has now been pushed back from the world market by the competitors in South Korea, Taiwan and China. Water ionizers from the earlier Soviet development have hardly caught on worldwide and are mostly only used for professional purposes in the food and hygiene industries. The illustration shows only a few current models from the development since. Since all devices from the Far East are designed for extremely soft water, the European and American importers had to focus on a few, particularly powerful devices and adapt them to the requirements of hard water. Devices that generate hydrogen water without base enrichment have also been on the market since around 2014. The author of this publication played a decisive role in both developments.

25 POT WATER IONIZERS Illustrations: AQUAVOLTA BTM pot ionizers have been known since 1931. They are the most original and easiest way to get electrolytically activated water. None of the manufacturers has yet received a design award for it. Functionality is in the foreground. They consist of an electrolysis cell with a cathode chamber (1) and anode chamber (2), which are separated by a diaphragm membrane (3). The chambers are filled manually with filtered water (4). The electrolysis is fed by a direct current power pack and controlled via control buttons with a timer. The AQUAVOLTA BTM 3000 shown here has a capacity of 2 x 2 liters. In one operation (30-90 minutes depending on the hardness of the water), 2 liters of alkaline activated water for drinking (ALKALINE WATER) can be produced and filled into the 2-liter storage container (5) provided using a tap mechanism. At the same time, 2 liters of acidic (ACIDIC) residual water are created. During commissioning, the electrolysis time required for the desired value of ph 9-9.5 must be determined, which is specific for the water to be used and cannot be precisely predicted. As a rule of thumb you can specify: - soft water up to hardness ie 9: approx. 30 min. - medium hard with hardness ie 10 15: approx. 45 min.- hard water ie 16 20: approx. 60 min. - very hard ie 21-25: approx. 75 min. - extremely hard over ie 25: 90 and more min understood German degrees of hardness. 1 ie corresponds to the converted 0.1783 mmol / l. and 1.78 0 fh (French degrees of hardness). Due to the very long production time, the water heats up and contains significantly less dissolved hydrogen in the area of ​​basic water, because this outgasses due to the design.

26 POT IONIZERS AND ECA Pot water ionizers are very popular in the former Soviet Union. The devices produced there, however, do not meet European standards in terms of electrical engineering or hygiene. The reason for the high acceptance of the devices in the CIS countries and the Baltic States is the research of the so-called Tashkent team under Stanislaw Alechin, who from 1978 organized the medical department of the Soviet major research project on electro-activated water. In 1998 he published extensive guidelines for the use of electroactivated aqueous solutions for the prophylaxis and treatment of the most common human diseases. 16) These medical guidelines have so far only been partially published in German. They are based on the use of pot ionizers to produce electrochemically activated functional water for a wide variety of medical purposes. 26 This is how it works: You add certain minerals to a defined water (mostly from reverse osmosis) and perform electrolysis. The best known is the production of anolyte 17), a highly effective but environmentally friendly disinfectant that is used in almost all Russian hospitals. It is made from a saline solution. In the Aquavolta BTM 3000 this only takes 30 minutes. During electrolysis, among other things, HOCl (hypochlorous acid), which is one of the most effective disinfectants, is produced in the anode chamber. In the cathode chamber, the electrolysis creates a low-buffered solution of NaOH, the catholyte. Katholyt is an environmentally and skin-friendly fat emulsifier. Despite a very high ph value of> 12, an extremely low redox potential of <(-) 800 mv (CSE) and> 1600 ppb dissolved hydrogen, it is very skin-friendly and not at all corrosive like sodium hydroxide solution with the same ph value. Because per liter, only 1-5 grams of salt are added to the reverse osmosis water or deionized water, so that a solution is created with almost no buffering. The effect consists in the enormous excess of OH - ions, which is created during the 30-minute electrolysis. Catholyte is also used in alternative medicine, e.g. used in cancer treatments. 18) Economical dosage with the enclosed measuring spoon for salt. After 30 minutes 2 types of electrochemically activated (ECA) water are produced. At 2.5 g salt / l, KATHOLYT is formed with a pH> 12 and an ORP of <(-) 790 mv (CSE) with> 1.6 mg dissolved hydrogen (i.e. 2). The ANOLYTE generated in parallel has a ph value of <. 2.7 and an ORP of> (+) 1000 mv (CSE)

27 THROUGH WATER IONIZERS 27 In Europe in particular, there are high demands on design and technology: you don't buy a perfect kitchen every day. Health awareness may have grown a lot in Germany in particular: But when the first devices came onto the market in Germany from 2004, the importers often only earned ridicule and scorn for their playful Asian look: that may be good, but such a device will not come in my kitchen! Pass-through water ionizers were developed in the Soviet Union and Japan. But only Japanese construction has caught on internationally, most recently most successfully with the help of Korean designers and engineers who travel the world to study other types of water and meet new consumer demands. Fortunately, that has now changed thanks to patient negotiations with manufacturers and a growing market. The devices now available only rarely have symbolized saucepans, steaming rice bowls and teacups on the control panel. There are now extremely beautiful water ionizers with a simple and elegant design that you don't have to hide in any kitchen, however high-quality.

28 THE TECHNOLOGY OF A CONTINUOUS WATER IONIZER 28 The graphic on the left shows in a simplified way what happens in the two chambers of an individual electrolysis cell with the anions and cations dissolved therein: They are (idealized) distributed separately to the chambers depending on the charge. At the same time, the applied decomposition voltage of the direct current results in the splitting of water molecules, so that hydrogen and OH - ions are formed on the right. On the left, however, there are oxygen and protons H +. The latter immediately form H 3 O + ions with H 2 O molecules. (This process, which is independent of electrolysis, is not shown.) With the 2-chamber system, standing water is treated. Attention: Depending on the required time, the water can heat up to the boiling point. As a result, most of the dissolved hydrogen and oxygen gases are lost. With the flow-through ionizer, flowing water is electrolyzed. In order for this to be successful with a flow rate of 1-2 liters / minute, the water jet from the ionizer's pre-filter system is distributed over several cells. Nowadays, at least 3 cells with 2 chambers each are common. Then both the alkaline and the acidic activated water are brought together and leave the device via the two outlets. The dissolved gases are retained in this system. In addition to the higher speed of activated water production, the multiple cell of a continuous ionizer has the advantage that, unlike most pot ionizers, it is under water pressure so that the hydrogen and oxygen produced during electrolysis cannot escape. This is because the solubility of these gases increases under higher pressure. The water temperature also hardly increases in the flow time reduced to less than 1 minute / l, which further improves the solubility. Also, cooler water is usually preferred when drinking. There are also flow-through ionizers with a built-in refrigeration compressor.

29 DISABLE WATER IONIZER 29 Sometimes devices look very similar, as shown below, but have very clear differences in the inner workings and in the device software. They consist of a housing in which the exchangeable prefilter unit, the direct current supply by transformer or switched-mode power supply and the electrolysis cell are housed. At the top there is usually a rotatable flexible hose as a filling aid for the alkaline activated water. The connection for electricity and tap water is on the underside. There is also the discharge for the acidic activated water, which usually ends in the sink. Contrary to what many manufacturers state, the sour water that runs off is e.g. Not suitable for disinfection in the harsh European water conditions, as the ph value achieved is seldom below ph 5.5. But it can be used for skin and hair care, as well as for watering flowers. This is because the flow rate has a decisive influence on the ionization performance in almost all devices. If the flow rate determined as optimal is not correct, the ph display is also incorrect.

30 UNDER-COUNTER IONIZER 30 Because of the visibly annoying hoses, many who want to buy a water ionizer for their well-designed kitchen are toying with an under-counter model in which the actual device disappears under the sink. With this type, the activated water is drawn from a separate tap with remote control via a neat spout and the acidic water flows cleanly from the lower swivel tap into the sink, without anything disturbing hanging in it. This is a little more complex financially and in terms of assembly, but sometimes actually cheaper than older table-top units, as the example of the Leveluk SD 501 shows (bottom right picture), which is around 1000 more expensive to buy than an advanced under-table ionizer. 31 UNDER-COUNTER IONIZERS WITH MODERN TECHNOLOGY 31 Double spout with integrated remote control Under-counter device Under-counter device Under-counter water ionizers have to struggle with a fundamental problem: basic (purple) water runs out of the upper tap and acidic water (red) from the lower one. When the tapping is stopped, both types of water remain in the line, while with good table-top ionizers all of the activated water is emptied via a drainage line through the acid water hose. Shortly after tapping, the device rinses both lines for a few seconds with reversed polarity acidic / basic. This water stops. During the relaxation up to the next tap, both waters (green) in the pipe neutralize each other. Both types of water dissolve deposits of the other type. Since alkaline activated water now secretes excess minerals in the so-called relaxation time (1-30 hours), it is very easy to narrow the ascending pipe, especially due to the sedimentation of lime. You can prevent this by running acidic water through the alkaline spout for a few seconds each time after the filling process by pressing the ACIDIC button. However, this is easily forgotten by inexperienced users, especially children, and is also cumbersome. Unfortunately, until 2016, only one manufacturer of under-sink water ionizers had managed to install a fully automatic self-cleaning system that I have been requiring since 2013. How it works is described in the right column. 3 seconds after starting the tap again, the remaining water is removed from the line and you can draw your water as usual.

32 FLOW-THROUGH IONIZER: CONNECTION METHODS 32 Every table-top ionizer is supplied with a deflecting aerator, with which it can be connected to the tap like a table-top water filter in just a few simple steps. This is the minimum equipment even for older models. By turning the lever, the tap is switched from normal operation with hot or cold water. Attention: Only cold water may be used to supply the water ionizer. You must not connect the deflector to a tap that is fed by a non-pressurized boiler. Almost all current flow-through ionizers have a regulation of the water supply, be it by a solenoid valve at the push of a button or a mechanical rotary control. So you can always be under the water line pressure of the cold water line. Therefore, as described for an under-sink filter on page 20, they can alternatively be connected to the cold water angle valve using an angle shut-off valve. The connection hose is then led to the water ionizer and inserted into its water inlet. An under-sink water ionizer like the Aquavolta Elègance with fully automatic self-decalcification by reversing the flow consists of the device part under the sink and the control tap on top. A correspondingly large hole in the plate or in the edge of the pool is necessary for this.

33 FLOW-THROUGH IONIZER: INTERNAL FILTER 33 There is often limited space in kitchens, so that narrow table-top units such as the AquaVolta Basic shown above on the left with only one filter cartridge are popular. Since the nuclear disaster in Fukushima, however, the range of double filter devices has risen sharply due to the increased sensitivity of consumers. In some areas of Central Europe, however, the quality of the tap water is so good that a second filter cartridge is not absolutely necessary. Devices like the Tyent Elite 999 Turbo shown above on the right are slightly wider than single-filter devices because of the two integrated internal filter cartridges. Like good household filters, the replaceable cartridges in water ionizers reduce residual pollutants such as heavy metals, agricultural residues such as hormones, pesticides, antibiotics and of course all kinds of germs to a barely measurable level. It is of course important that the filters are changed according to the manufacturer's instructions. The filter cartridges are usually located behind flap doors in the housing.
