Make gingerbread yourself: The easiest guide in the world
You don't need a lot of ingredients to make gingerbread. You probably already have most of them in your kitchen cupboard anyway. Here is your shopping list for 30 items:
- 200 g honey
- 100 g raw cane sugar
- 150 g butter
- 500 g spelled flour
- 1 egg
- 1 packet of baking powder
- 10 g cocoa powder
- 2 teaspoons of gingerbread spice
- 100 g of chopped almonds

Already back from shopping? Then I'll show you now how to turn your ingredients into delicious gingerbread. The recipe takes a little longer because you have to put the batter in the refrigerator overnight. If you're in a hurry, there's a quick recipe below that'll be ready in half an hour.
Let the butter melt in a saucepan at low temperatures, add honey and raw cane sugar and stir everything until it is evenly mixed. Please let them cool down afterwards.
Put the remaining ingredients in a mixing bowl and then mix them with the honey mixture from step 1. Please stir and then leave in the refrigerator overnight.
Did you sleep well? Take the batter out of the refrigerator and let it warm to room temperature. Takes about an hour.
Preheat the oven to 160 degrees circulating air. Then line a baking sheet with parchment paper. Now you can shape gingerbread loaves from the dough (size as desired) and place on baking paper.
Put the tray in the oven and let the gingerbread bake for about 15 minutes.
Gingerbread heart and figures
Round gingerbread cookies are too boring for you? Do you want hearts, stars, males or other imaginative characters? No problem. Instead of forming small camisoles out of the dough, in step 4 you simply roll it out on a separate baking paper. It should be about half a centimeter high. Then you bring the dough into the desired shapes, e.g. B. with the help of cookie cutters. You then also put them in the oven for 15 minutes.
Frosting and chocolate icing
Ah, do you like it especially cute? I can't blame you After you have taken your gingerbread out of the oven and let it cool down a bit, you can coat it with icing or chocolate icing.
Mix 250 grams of powdered sugar with 4 tablespoons of water. You can get a creamy alternative with 3 tablespoons of crème fraîche, one tablespoon of lemon juice and 150 g of powdered sugar.
Melt 200 g couverture in a water bath (= heat water in a shallow saucepan and let a heat-resistant bowl with the chocolate float in it until it is liquid).
Make gingerbread spice yourself
You can now find gingerbread spices everywhere, especially in the run-up to Christmas. But you can also mix it yourself. Typical ingredients are powders made from anise, fennel, ginger, cardamom, coriander, mace, nutmeg, cloves, allspice and cinnamon.
Find your favorite mixture yourself or use our example recipe (all ingredients in powder form): 2 teaspoons cinnamon, 2 teaspoons nutmeg, 2 teaspoons of cloves, 2 teaspoons of coriander, 2 teaspoons of carmone, 1 teaspoon of ginger, 1 teaspoon of fennel, 1 teaspoon of anise, 1 teaspoon of allspice .
Storage: How long can homemade gingerbreads keep?
Gingerbread has been so popular for centuries because it lasts for a long time. If stored correctly, it tastes good even after 8 weeks. That means: You should close it well, e.g. B. in a tin can and at temperatures around 16 to 18 degrees. An apple wedge that you change regularly will prevent it from drying out.

Then let's not waste any time!
Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
Put the following ingredients in a bowl and mix them together: 500 g wholemeal spelled flour, 220 g raw cane sugar, 4 tbsp dark cocoa powder, 2 tbsp gingerbread spice and 1 packet of baking powder.
Pour in a packet of soy cream and mix everything good with your hands.
Form small loaves by hand and place them on parchment paper.
Bake them for about 15 minutes. Larger loaves may take a little longer.

Beat 4 eggs until frothy, preferably with a hand mixer or a food processor. It's faster than with a whisk.
While you continue to stir, let 200 g sugar slowly trickle into the egg foam. Add 400 g ground almonds, 2 teaspoons of grated milk chocolate, half a teaspoon of cinnamon and a packet of gingerbread spice. Mix everything into an even batter.
Preheat the oven to 175 degrees and line a baking sheet with parchment paper. Use your hand or a spoon to form small loaves of the dough (size as desired). You can now decorate them with whole almonds if you like.
Place the tray in the oven for about 15 minutes.
