How to make fresh pasta dough

  1. Mix the flour with 1 teaspoon salt. Add the eggs and oil, mix everything first and then knead with your hands to form a smooth, supple dough. Knead until the dough is shiny. Wrap the dough in a kitchen towel and let it rest at room temperature for about 30 minutes.
  2. Remove about a quarter of the dough and roll it out as thinly as possible with a rolling pin on a floured work surface or shape into a thin sheet in the pasta machine. To do this, turn it several times only when the roller opening is set wide (level 1). Keep folding the dough up on the sides and then twist it with the open side down. Finally, turn the cylinder opening narrowly (level 4-5).
  3. Let the pasta sheet dry on a floured kitchen towel for approx. 30 minutes. In the meantime, roll out the other three quarters of dough and let rest.
  4. Dust the pasta sheets lightly with flour, roll them up and use a long knife to cut into narrow or slightly wider ribbon noodles. Or cut the dough sheets into ribbon noodles with the attachment of the pasta machine.
  5. Loosen the pasta and leave to dry on floured kitchen towels for about 30 minutes. Bring plenty of water to the boil in a large saucepan and season with salt. Cook the pasta in it until "al dente". Fresh pasta takes about 3 minutes, slightly dried pasta 1-2 minutes longer.
